  1. Bring a large pot of water to a boil. Cook pasta according to package directions minus about 1 minute.
  2. Meanwhile, in another medium pot, bring the marinara sauce to a simmer.
  3. Add the pumpkin puree, cauliflower puree (if using) and the nutmeg. Bring back up to a simmer.
  4. When pasta is done, drain and rinse. Add to the marinara mixture along with the mascarpone cheese.
  5. Mix well and let finish cooking until the desired texture is achieved, about 3-5 minutes.
  6. Serve hot topped with fresh basil if desired. Enjoy!
