First let me say, I’m so glad you’re here and I hope you find something inspirational to read or make while you look around!
I started my blog for two very different, albeit, equally important reasons. One is that I wanted a collection of all my recipes in one easy to find place. Even thought we are pescatarian, gluten free and mostly dairy free, which is reflected in the recipes you’ll find, my hope is that you will look at each recipe as just plain yummy goodness that just happens to be pretty good for you! I’ve always loved to cook. My first recipe I created was for a morning smoothie when I was 9 and had to make my own breakfast. It definitely wasn’t very good at all, but I loved the process of trying new combinations to finally find what makes it work. Fast forward to when I gave up eating meat in 2008 for health and ethical reasons. I had to figure out an entirely new way to eat! At first I was totally lost and felt so limited and intimidated. I burnt my fair share of tofu and ordered a few pizzas along the way, but eventually I didn’t miss or crave meat at all. The variety of our weekly menu is what still surprises me. I now walk in the grocery store excited to see what I can find to cook with that I haven’t tried before! Then again in 2013, when my son was put on a gluten free, dairy free diet, I found myself in uncharted waters. At this point I think I have tried every gluten free and dairy free alternative they make. They are getting better by the day and some I even find we like better! You’ll find a little bit of everything here! From easy to make appetizers for parties, to completely vegan entrees, to recipes from my grandmothers and even how to sneak more veggies into your kids meals without them knowing they are even in there!
The second reason I started my blog was more of a personal challenge for myself. My son was diagnosed with severe delays in all areas in 2013 and subsequently Autism in 2014. I would spend the next two years fully submerged in researching what we could do to help him and driving (a lot) to therapy appointments. We welcomed our second son in early 2014. By the time 2015 rolled around I was more than just craving “normalcy” including travel, I needed it it! When I would hear everyone around me talk about their fabulous trips they had taken and how much fun they had, I was secretly dying inside. Travel, to me, is so important, but I could never bring myself to try, in fear of how it would be for our family. In all fairness, we did try a few car trips in 2014, but they were so miserable that I swore off travel completely for at least 2 years. One day in 2016, I said screw it. We are going somewhere, anywhere, and I don’t care how bad it is! My youngest needed to experience new things and I needed to start gong places again. I thought I could write about it for other special needs families or really anyone who wants to travel with children. I’ll be the sacrificial lamb if you will and either way I would have something to write about!
